Hey there!
Palm oil curry, yeah that’s what I’m calling it. LOL! This palm oil curry is easy to make, full of flavour and filling! Palm oil is an essential ingredient in West African cuisine and it's used as an oil and as a seasoning. This dish is great for colder weather to warm you up and it’s very comforting. But also, you can really eat it in any weather. Using palm oil and coconut milk is a concept I borrowed from Afro Brazilian cuisine. I wrote about the connections between the two regions in my ebook The Many Ways to Eat rice. There is so much to explore about how our food is connected and follows the slaves as they were moved from Nigeria and the rest of West Africa to Brazil into the Caribbean and North America.
